The Apple Bread recipe, better known as "fiassin di pum", is one of the most appreciated specialities of the Italian city Vigevano. It's a very sweet and delicious traditional bread-derived from Lombardy.
Suitable for everyone from adults to children, it's a fresh and healthy recipe that was born in the farms, when poverty forced people to adapt creating something to eat with the few available ingredients.
Preparation time is about 60 to 90 minutes, while you need 20 minutes to fully bake the bread loaves, suitable for a large number of people.
Step 1: Put some flour on a work surface. Mix it together with old dough, salt, butter, sugar and milk, then add more flour and keep mixing until everything is well blended. Add the fresh yeast and mix it with the dough.
Step 2: Put again some flour on the work surface, then put on the dough. Use a rolling pin to stretch it, then let the dough rest for some minutes. Put more flour on the surface, arrange the apples on it and then place the dough on them. Press the mixture with your hands so that the apples can stick on the dough.
Step 3: Arrange another layer of diced apples above the dough, and stretch again the mixture to stick the apples on the mixture and obtain an homogeneous mix. Twist the upper side of the dough towards its center, then repeat the process with the lower side.
Step 4: The final result should look like a roll. Be sure that the apples cover the whole dough, then squeeze it and repeat the above process from left to center, then from right to center. Now, the result should look more like a sandwich. Manually stick the apples on the dough to cover empty spaces.
Step 5: Leave the dough to rest and rise for 30 to 45 minutes under a plastic sheet. The dough should leaven twice than its dimensions. After that, cut the mixture in half horizontally in order to get two pieces of dough. Squeeze both mixtures and then wrap them while adding flour. Now, following Apple bread recipe, your dough should look like a sort of sausage.
Step 6: Cut the dough into 3-inches slices, turn them and then roll the slices into balls. Put 4 or 5 loaves into each pan, not too close from each other. Sprinkle a bit of sugar on each loaf, then put the pans into oven to 395° F for 20 minutes.
