  • 18 oz gluten free flour
  • 14.5 oz warm water
  • Brewer's yeast
  • 1 oz olive oil
  • 1 pinch sugar,
  • Salt Q.S.

Preparation

Step 1: In order to make a gluten free bread recipe, dissolve the yeast with water, a tablespoon of flour, incorporate gluten-free flour, warm water and mix with an electric mixer.

Step 2: Add the oil and a pinch of salt and continue stirring until the mixture is smooth and free of lumps, neither too thick nor too liquid.

Step 3: Once it reaches the right consistency, cover the bowl of the dough and let it rise for about an hour. Prepare the work surface by covering it with baking paper that does not stick to the dough.

Step 4: Cover with baking paper the baking tray in which gluten-free bread will be baked in the oven. Sprinkle the work surface with gluten free flour and give a shape to the bread, or take small quantities of dough to roll on the flour to obtain good little sandwiches.

Step 5: Preheat the oven at 390° F and bring to boil water in a pot of iron. Arrange the pot with water to boil already in the oven to create a humid environment and make sure that the bread has a crispy crust at the end.

Step 6: Let the bread on the pan, which will continue its leavening in the oven. Cook for 20/30 minutes (depending on the size of the bread), until the bread has reached its typical golden color.
